Peach Cobbler

We have a nice peach tree this year and it’s loaded with peaches. Here’s my best peach cobbler recipe, it made the house smell wonderful! And it tasted great too!

Peach Cobbler

 

4-6 cups of fresh peaches, sliced (you can use canned)

1/2 cup sugar

1 teaspoon cinnamon

1 teaspoon lemon juice

1 1/2 tablespoons cornstarch

Topping

1 cup flour

1/4 cup sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

3 tablespoons shortening

1/2 cup cream (or milk)

In a large saucepan heat the peaches, sugar, cornstarch, cinnamon and lemon juice until thick and bubbling.

In a bowl whisk the dry ingredients for the topping. Cut in the

shortening until it’s the size of peas. Mix in the milk and mix until it all comes together.

Pour peaches into a 8x8 pan and dot with the topping. Sprinkle 1 tablespoon of sugar over the topping.

Bake at 350 degrees for 20-25 minutes.

Serve warm with ice cream!

Yum. I need to make a cobbler, I'm craving one, although I'm going to try to make a healthier version to see how it comes out.
