Peach Bread

We have a peach tree this year so I’ve got load of peaches. I thought this would be a fun way to use some! It’s hard to tell from the picture, but their are pretty pieces of peaches in the bread. This is a nice moist bread that everyone loved!

Peach Bread

2 cups sugar

1 cup oil

3 eggs

2 teaspoons vanilla

2 cups peaches, peeled and chopped

3 cups flour

1 teaspoon salt

1 teaspoon soda

3 teaspoons cinnamon

Heat oven to 350 degrees. Spray 2 8x4” bread pans with Pam.

In a bowl whisk the dry ingredients. In a mixer beat the oil and sugar for 2 minutes, beat in the eggs and vanilla.  Mix in the dry ingredients and the peaches. Pour into prepared pans. Bake 1 hour or until a toothpick comes out clean. Cool in pans 10 minutes then remove to a wire rack to finish cooling.

Yum. I just made some peach jam a few days ago on my blog as a way to use up some peaches. But, peach bread sounds like a fantastic idea. I bet the peaches keep the bread incredibly moist.
