These muffins are low and fat and have some whole wheat flour in them and they’re easy! The kids loved them!
Low Fat Pumpkin Muffins
2 eggs
1/4 cup oil
1/4 cup honey
1/2 cup brown sugar
1 1/4 cup flour
1/2 cup whole wheat flour
1/2 teaspoon baking
1/2 teaspoon salt
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1 teaspoon cinnamon
1 cup chocolate chips
Heat oven to 400 degrees. Spray a 12 cup muffin tin with Pam and a large custard cup. In a bowl whisk the dry ingredients. In another bowl whisk the pumpkin, eggs, oil and honey. Mix everything together until well mixed, and the chocolate chips and scoop into the prepared muffin tin. Bake for 15-20 minutes.
