Blueberry Streusel Muffins

I first made this recipe years ago and then couldn't find it again. I hate it when that happens! I came across it the other day and it's just as yummy as I remember! Streusel on Blueberry muffins! Yum!
  • Blueberry Streusel Muffins
  • 1/3 cup sugar
1/4 cup butter, softened
1 egg
2 1/3 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
1 1/2 cups fresh or frozen blueberries
  • Streusel

1/2 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
1/4 cup butterHeat oven to 375 degrees. Spray a 12 cup muffin tin with Pam and a small ramekin. In a bowl whisk the flour, baking powder and salt. Sprinkle in the blueberries and gently toss to coat with flour.

In a mixing bowl, cream sugar and butter. Add egg; mix well. Add the milk and mix again.Mix in the flour and blueberry mixture just until no flour shows. Fill 12 greased or paper-lined muffin cups two-thirds full. In a small bowl, combine sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees F for 25-30 minutes or until browned.
