What to do with the leftover sausage hash!

In yesterdays post I shared a recipe for Sausage Hash and I promised you some options for using the leftovers. Here are two that my family loved! I ended up doing the breakfast burritos twice.



Here's on option for the leftover hash-

Sausage Quiche

4 eggs
2 cups milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups grated cheese

Heat oven to 425 degrees. Spray a pie pan with Pam.

Put 1-2 cups of leftover hash in the pie pan, cover with cheese.

In a bowl beat the milk, eggs and seasonings. Pour over hash and cheese. Bake for 30 minutes or until a knife inserted in the middle comes out clean.


Here's another option for the leftover sausage hash-

Breakfast burritos

1 tablespoon butter
3 eggs
1 cup sausage hash
grated cheese
3 tortillas

Wrap tortillas in a towel and microwave for 30 seconds or until warm.

Melt butter in a frying pan. Whisk the eggs in a small bowl and pour into pan. Sprinkle in the sausage hash and scramble and cook until done.

Put about 1/2 cup of egg, hash mixture on tortilla and sprinkle with some cheese. Roll up like a burrito. This makes 3.
