Sausage Hash

This is my new purse that I won from a giveaway over at My Dear Trash. I won a gift certificate to this really great online store called Pursenickety. Can a girl have to many purses?


I love it when I read a recipe and I have all the ingredients! I found this recipe over at
A Year From Oak Cottage. It makes a lot, so tomorrow I'll share a couple of things I did with the leftovers! I used a red pepper, we like them better than the green and I used Italian sausage. Yum, this is sooo good! I left out the olive oil and just cooked it with the fat from the sausage. My Italian sausage was from Costco and it tends to be pretty lean, but it didn't need the olive oil.

Sausage Hash

1 pound Italian sausages
1 tablespoons olive oil
1 medium onion, peeled and chopped
2 medium carrots, peeled and grated
1 medium green pepper, seeded and chopped
6 medium potatoes, boiled, cooled, peeled and chopped
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper


Heat the olive oil in a skillet over medium high heat. Removed the sausage meat from the skins, and discard the skins. Crumble the meat into the hot oil. Cook, breaking it up and mashing it with a fork until it is no longer pink and has begun to brown in places. Add the onions, carrots and green peppers. Cook and stir until softened. Add the potatoes, salt and pepper. Continue to cook, stirring occasionally, until the potatoes are lightly browned and the mixture is heated through. Serve immediately.
