A Giveaway and Chocolate Chip Cake

Today I'm excited to be doing a giveaway! Yup, that's right! You could win some business cards! How great is that! You could put your blog name on them, or even your Etsy Store!

Sizes: 2 x 3.5”, 2 x 3”, 2 x 2” (square card) or 1.5 x 3.5” (skinny card)

Paper: 14 pt gloss cardstock, 14 pt matte cardstock or 13 pt recycled uncoated cardstock

I made this Chocolate Chip cake for Valentine's Day, and I guess we didn't get a picture of it, so I took a picture of the page in my cookbook. Sorry, it's not a great picture. I made it in a heart shape pan. I love the nice butterscotch filling. The Chocolate Chip Glaze is super simple, and I love the way it drizzles down the sides of the cake.

Chocolate Chip Cake


2 cups flour
1 cup brown sugar
1/2 cup sugar
1/2 cup shortening
3 eggs
1 1/4 cups milk
3 teaspoons baking powder
1/2 teaspoon soda
1 teaspoon salt
1 1/2 teaspoons vanilla
1/2 cup mini chocolate chips

Preheat oven to 350 degrees. Spray 2, 8 or 9 inch pans with Pam. I used heart shaped pans.

Measure all ingredients in a mixer and beat on high for 3 minutes.

Butterscotch Filling


1/2 cup brown sugar
1/4 cup cornstarch
1/4 teaspoon salt
1/2 cup water
1 tablespoon butter

In a small pan heat the sugar, salt cornstarch and water. Stir and cook until it comes to a boil. Boil and stir for 1 minute. Beat in the butter and pour into a small bowl. Cover with plastic wrap, pressing it into the top of the filling. Cool.

Chocolate Chip Glaze

1/2 cup chocolate chips
2 tablespoons butter
1 tablespoon corn syrup

Heat all ingredients over low heat, stirring constantly, until chocolate is melted. Cool slightly.
To Assemble Cake

Fill layers with butterscotch filling. Spread Chocolate Chip Glaze over top of cake.
