A Few Thrift Store Finds and Penuche Coconut Delight Bars

My daughter Jennie and I found a few things at DI yesterday, so I thought I'd share them with you!

We're not quite sure what these are. We're thinking they may be little tea bag holders. Do any of you know what they are?

I love this mini soup terrine! It is so cute! It holds 1 quart of liquid. It's my new favorite kitchen item!

This is a mini cheese plate I found, soon to be a mini cloche!



Penuche is another name for yummy! These bars have a great caramely coconut flavor and are so moist and chewy! I found the recipe in an old cookbook called Favorite Recipes of Catholic Women, Desserts Edition. I think it was printed in the 1960's. It has lots of great looking recipes in it.

Penuche Coconut Delight Bars
Base Layer

1/2 cups brown sugar
1/2 cup shortening
1 cup flour
1/2 teaspoon salt
2 tablespoons milk

Topping

1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 tablespoons flour
1/2 teaspoon baking powder
1 1/3 cup flaked coconut

For Base Layer

Heat oven to 325 degrees. Spray an 8 inch square pan with Pam.

In a mixer beat the shortening and brown sugar. Add the flour, salt and milk and beat well. Pat into prepared pan and bake for 20 minutes.

In the same mixing bowl beat the eggs. Add the brown sugar and vanilla and beat well. Add the flour and baking powdered and mix. Mix in the coconut. Pour over the base layer and bake for 25 minutes. Cool and cut into squares.

I think the tea bag holders may also be spoon holders, for tea or coffee serving. We have a bunch of little baby plates, maybe two inches in diameter for just that reason.

I LOVE the cookbook you found. In my experience, Catholic women are great cooks. Can't wait to hear about any recipes you try. I love when a day at the DI is a success.
