A walk on the reservoir and Maple Muffins


We went up to the reservoir in Mantua for a little walk on the ice. I love this picture of Sloan!

Don't you just love maple! I came up with this recipe the other day, and everyone loved them! Simple and easy to make with a great maple flavor.
Maple Muffins

2 cups flour
1/2 cup sugar
1/4 teaspoon salt
3 teaspoons baking powder
1 cup milk
1 teaspoon maple extract
1/4 cup oil
1 egg

Put all the dry ingredients in a bowl and whisk until mixed. Add the wet ingredients, stir well. Scoop into greased mini muffin tins, or regular muffin tins. Makes 24 mini or 12 regular muffins. Bake at 400 degrees for 15 minutes for mini or 25 minutes for regular.
