Pumpkin Bread!
One morning at my 5:30am muscle toning class we were talking about food. You know come to thing of it, I don't think there are to many mornings that the subject of food doesn't come up! Anyway, one of the girls said she'd eaten 3 pieces of pumpkin bread the night before. I mentioned to her that quick breads aren't usually that unhealthy because they usually have less fat and sugar then say a cake. She said oh no, not my pumpkin bread, it's got lots of sugar and oil in it. I asked her for the recipe and she gave it to me the other day, so I made it. It is soooo good! It makes 2 large loaves or 4 small. Give some away, don't keep it all in the house! But, you do have to try it!
I made 1 large and 2 small loaves. Chauncey ate all but 4 slices of the large loaf! Then he went to swim team. He said it was a great practice!
Pumpkin Bread
3 1/2 cups flour
1 1/2 teaspoons salt
2 teaspoons soda
1 teaspoon cinnamon
4 eggs
2 cups pumpkin
1/2 cup water
3 cups sugar
1 cup oil
1 teaspoon vanilla
Heat oven to 350 degrees. Spray 2 large loaf pans with Pam, or 4 small ones.
In a bowl whisk the dry ingredients.
In a mixer beat the eggs, pumpkin, sugar, water, oil and vanilla. Beat in the dry ingredients. Mix well.
Pour into prepared pans. Bake large loaves 1 hour and small ones 45 minutes. Let cool in pans for 10 minutes then remove to wire racks to cool.

I got a recipe for pumpkin bread this fall and made it ~ I absolutely loved it!! It is very dangerous to have in the house for sure!
