Don't Forget My Contest and Artichoke and Onion Spirals

I was looking at this recipe for Cheese and Celery Whirls over at The English Kitchen. I decided to make a few changes in it and fix it for the kids dinner along with some soup. They loved it! I sliced mine thicker, like cinnamon rolls.

Artichoke and Onion Spirals


1 cup flour
1 cup whole wheat flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 cup chopped onion
1/2 cup chopped artichoke hearts
1 1/2 cups grated cheddar cheese
2 tablespoons olive oil

Heat oven to 450 degrees. Spray a 12x7 inch pan with Pam.

Saute the onion in the olive oil. Add the chopped artichoke hearts.

Whisk the dry ingredients in a large bowl. Cut in the shortening with a pastry blender. Add the milk and mix until it just starts to come together. On a floured surface knead the dough 5 or 6 times. Pat out into a rectangle about 1/2 in thick. Spread the onion, artichoke mixture over the dough. Sprinkle with 1 cup of the cheese. Roll up like a jelly roll and cut into rolls like you would cinnamon rolls. Place in prepared pan and sprinkle with the reaming cheese. Bake for 15 minutes or until golden brown.

We're the same age? You look so young and you are in great shape and you cook and are creative and I am so jealous!!!

Aquarius, huh? Do you love the water? I do. I love the ocean and snorkeling. I wish I could do it more, but living near St. Louis, we just don't get that much opportunity to get in the ocean (haha), and that old Mississippi is way to muddy to see those big old catfish!

At 51 I've started thinking of everything I still want to do. Isn't that silly? When I look to plant a tree, for example, I make sure it grows pretty darn fast!
