Don't you just love soup when the weather starts getting cold? Mmm, our family does! I don't cook with potatoes very often, but I bought some the other day to make this soup. My husband kept eating the bacon and onion, but we still had enough for the soup. anything with bacon in it goes over well at our house!
Potato Soup
1 lb bacon1 large onion, chopped
5 medium size potatoes
1 pt heavy cream
2 cups milk
1/3 cup flour
4 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
Peel and dice the potatoes and cook in boiling water until just fork tender. Drain and set aside.
Chop up bacon and brown in a frying pan, when it's almost done add the chopped onion and cook until translucent. Add the butter and stir until melted. Stir in the flour and cook for about 2 minutes. Add the milk and cook until it just starts to thicken. Add the cream, potatoes, and seasoning and cook until heated through.
