Don't Ya Love Hot Pancakes For Breakfast? How About Raised Griddle Cakes


I came across this recipe the other day and made some modifications. The original recipe made a lot of batter and was very thin. These are so easy to make up the night before and they have a hint of sourdough taste to them. Of course I made Sloan's with some chocolate chips in them!


Raised Griddle Cakes

1/2 cup cornmeal
1 cup boiling water
1 cup flour
1/2 cup milk
1 teaspoon yeast
1 tablespoon brown sugar
1 egg
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup whole wheat flour

In a large bowl stir together the cornmeal and boiling water. Let sit for 15 minutes.

While it is still warm stir in the flour, sugar, milk and yeast. Cover with plastic wrap and refrigerate overnight.

In the morning, mix in the egg, baking powder and salt. If the bater seems to thin add the 1/2 cup of whole wheat flour.

Heat a lightly oiled griddle over medium heat. Spoon pancake batter onto the hot griddle and cook until brown on both sides. Serve at once with butter and syrup.
