Lemon Brown-Eyed Susan Cookies and a contest!




I'm participating in Flavor of the Month sponsored by (
Bake at 350), and this months flavor is lemon or lime. We can make anything we want using that flavor. So, all these ideas kept popping into my head, but I finally decided that it should be a cookie, but something different! Looking through a library cookbook I found a recipe for Lemon Black-Eyed Susan Cookies.

Lemon Brown-Eyed Susan Cookies

1 cup sugar
1 cup butter, softened
3 tablespoons lemon juice
1 egg
3 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg yolk
1 teaspoon water
3/4 cup chocolate chips, semisweet

Cream butter and sugar for 3 minutes. Add the egg and lemon juice and beat well.

In a bowl whisk the flour, baking powder and salt. Mix into the sugar mixture until well blended.

Chill in a bowl, covered in the refrigerator, for 1 hour.

Heat oven to 400 degrees.

On a floured surface roll out the dough to 1/4 inch thickness. Cut with a flower shaped cookie cutter and place cutouts on cookie sheets.

In a small bowl combine egg yolk and water. Brush on cutout cookies. Bake for 5-7 minutes or until the edges are light golden brown. Immediately place a chocolate chip in the center of each cookie. Remove cookies to cookie racks to cool.


Sloan thought the cookies needed more chocolate, so she got out the chocolate syrup for hers!

One of my favorite flowers is Black Eyed Susans. This is such a great idea.
