Mississippi Mud another family favorite!

I got this recipe from my husbands boss's wife when we were first married. It's always been one of my husbands favorites. I love it because I usually have everything on hand to make it! It even works if the marshmallows are getting a little hard!

Mississippi Mud

2 cups sugar
1 cup shortening
4 eggs
1 1 /2 cups flour
1/3 cup cocoa
1/4 teaspoon salt
2 teaspoons vanilla
1 cup nuts, chopped (I leave them out)
Most of a package of mini marshmallows

Frosting

2 2/3 cups powdered sugar
1/2 cup butter, melted
1/4 cup milk
1/3 cup cocoa
1 teaspoon vanilla

In a mixer bowl cream the sugar and the shortening for 2-3 minutes. Add the eggs and vanilla and beat. Add the flour and cocoa powder and mix well. Pour into a greased 9x13 inch pan and bake at 300 degrees for 25 minutes. It will not look done, but cover the top with as many mini marshmallows as you can. Turn the oven up to 350 degrees and bake for another 10 minutes. Cool completely than frost. Cut into bars.

For frosting

Beat all the ingredients in a mixer until well mixed. Pour over the cooled marshmallows.
