I came across this recipe on a blog the other day, but I forgot who's blog it was! So if it's your recipe, let me know. These sounded so yummy I just had to give them a try. My family loved them, even Sloan! The house smelled so good with these in the oven! They are moist with a nice cinnamon flavor.
Sour Cream Apple Muffins
Streusel Topping
1/2 cup brown sugar, packed
1/3 cup flour
4 tablespoons cold butter
Muffins
2 cups flour
3/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon soda
1 teaspoon cinnamon
1/4 teaspoon fresh ground nutmeg
1/4 teaspoon allspice
1/4 teaspoon cloves
1/4 teaspoon salt
2 eggs
4 tablespoons butter, melted
1 1/2 cups sour cream
2 cups apples, chopped (I left the peels on for extra vitamins or laziness)
Heat oven to 375. Grease a 12 cup muffin cup and 3 large custard cups.
Prepare streusel topping: In a small bowl mix brown sugar and flour, cut in butter with a pastry blender until coarse crumbs are formed. Set aside.
In a large bowl whisk the dry ingredients. Mix in the eggs, sour cream and melted butter until just moistened. No more than 15 to 20 strokes. Fold in apples. Scoop into prepared cups and top with a tablespoon of streusel topping. Bake for 20-25 minutes.
