Popover Pie For Dinner

I love a one dish meal and this recipe went over really well at my house. I had never cooked potatoes in oil in the microwave, so I enjoyed trying something new to make a dish cook faster. The popover top puffed up really pretty when it was in the oven, then it deflated a little, but it still looked good.


Popover Pie

12 oz potatoes (about 1 large)
2 tablespoons oil
2 eggs
1 cup milk
1 tablespoon butter, melted
1 cup flour
1/2 cup chopped onion
12 oz ham, cubed or bulk pork sausage
1/2 cup Parmesan cheese, grated
salt and pepper

Heat oven to 450 degrees.

Toss the potatoes with 1 tablespoon of the oil, 1/4 teaspoon salt and a pinch of pepper and microwave on high until the potatoes begin to soften, 5 to 7 minutes, stirring the potatoes halfway through cooking. Drain the potatoes well if needed, mine didn't need to be.

Whisk the eggs, milk, butter, 1/2 teaspoon salt and 1/8 teaspoon pepper together in a large bowl. Stir in the flour until just incorporated but still a bit lumpy, and set aside.

Heat the remaining 1 tablespoon oil in a 10 inch oven safe skillet, I used my cast iron skillet, over medium heat until simmering. Add the sausage and breakup with a spoon and cook until no longer pink. If you're using ham, just cook with the onion until onion is almost cooked. Add the potatoes and lightly brown.

Poor egg mixture evenly over meat mixture and sprinkle with cheese. Bake 25 to 30 minutes or until golden brown.

Let cool for 5 minutes before loosening from the pan and serving.
