My guys love pot pie, even the little cheap ones from the store, so I decided to make them one with turkey leftovers. This time I rolled out my crust between wax paper. It worked really well, and the crust was extra flaky without the extra flour on it. My guys loved this pot pie, and it was so simple to make and inexpensive.
Turkey Pot Pie
Prepare a double crust for a 10 inch pie pan
1 can cream of chicken soup
1 onion, chopped
1 extra large potato, chopped
2 cups turkey, chopped
1 large carrot, chopped
1/2 cup celery, chopped
1 tablespoon oil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon salt
In a microwave bowl put all the veggies, seasonings with the oil, toss gently. Microwave for 4 minutes, stir and microwave more if they are not fork tender.
Put the bottom crust in the pie pan and add the turkey and the veggies. Top with cream of chicken soup. Cover with the top crust. Crimp edges and vent top. Bake at 400 degrees for 30 minutes or until crust is brown.

Hey, Carol! Thanks so much for visiting my blog! It sounds like we have a lot in common---swim team, trail running!!! I love to eat--just not cook! I'd rather do the dishes! But, reading your recipes may change that. One of my boys saw the chocolate puddle cookies and was quite interested! I'll have to give it a try. I like the apple muffins!!
