Spoon Bread
3 cups milk
3 tablespoons butter
3/4 cup cornmeal
1/4 teaspoon salt
3 eggs, separated
3 teaspoons baking powder
Heat oven to 350 degrees. Spray a large pie pan with Pam.
In a large pot cook the milk, butter and cornmeal until thick and bubbly. While you're doing this you can clean out the fridge between stirrings (I actually like to use a whisk), that's what I did. lol! When it's thick and bubbly, take your bowl with the yolks and add a few spoonfuls of the cornmeal mixture and stir. Then stir it into the pot of cornmeal and stir well, remove from heat.
In a bowl whip the egg whites and baking powder, I like to use my hand mixer. Fold the whipped egg whites into the cornmeal mixture, be gentle. Pour it into prepared pan and bake for 40 minutes. Let sit for 5 minutes, it will deflate a little, but that's ok. Serve with butter and honey or jam.

sounds good. i'm staying away from bread and this is too tempting. love butter and honey esp. on warm bread. have a good day.
This sounds DELISH!! I wonder if I could use my almond milk in place of the milk. I will report back and let you know. LOL I ♥ your blog!
I am not much of a baker, but this sounds really good. Will have to try it!
