I just love adding cream cheese to baking, yum! I made these cookies with Sloan in mind because she loves mint and Oreo's. I thought the chocolate cream cheese cookies were a good base for the mint chips and Oreo's. These cookies are nice and chewy in the middle but crispy on the outside, Yumo! I brought them along for our canoeing trip and everyone gobbled them down.
Cheesy Double Chocolate Mint Oreo Cookies
1 cup sugar
1 cup brown sugar
1 cup shortening
1 8oz package cream cheese, room temperature
3 eggs
2 teaspoons vanilla
3 1/2 cups flour
1/2 cup cocoa powder
1 1/2 teaspoon soda
1/2 teaspoon salt
2 cups mint chips
1 cup crushed Oreo's
Heat oven to 350 degrees. In a bowl whisk all the dry ingredients.
In a mixer cream the sugar, brown sugar and butter for 2 minutes. Beat int he cream cheese and eggs. Mix in the dry ingredients then the chips and crushed Oreo's. Scoop onto cookie sheets with a cookie scoop. Bake for 10-12 minutes. Cool on wire racks.
