Soft Oatmeal Cookies

Chauncey asked me to make some cookies that Sloan wouldn't eat. Hmm, does that mean that he thinks Sloan eats all the cookies? Have you seen a teenage boy take one cookie? Hmm, I remember seeing him heading into the computer with a stack of say six cookies! lol Well, I decided to make some cookies for him and some for Sloan. I made Sloan the chocolate chip cookie recipe I posted the other day, and these are the cookies I made Chauncey.
I liked this recipe because it was different. It was in an old cookbook, and it said to boil the raisins with some water for 5 minutes. It really made the raisins stay soft as the cookies baked, and the cookies were nice and moist inside. They are different than most oatmeal raisin cookies, so I'll be baking this recipe up again, because Chauncey and Ken love them!
Soft Oatmeal Cookies
1 cup raisins
1 cup sugar
1 cup shortening
2 eggs
1/4 teaspoon salt
7 teaspoon raisin water
1 teaspoon soda
2 cups flour
2 cups oatmeal
Heat oven to 350 degrees. Put raisins in a small saucepan and cover with water. Bring to a boil, cover, reduce heat to low and simmer for 5 minutes. Drain and save 7 teaspoons of the liquid.
In a bowl whisk the flour, soda, salt and oatmeal.
In a mixer beat the sugar and shortening for 2 minutes. Beat in the eggs, vanilla and raisin water. Mix in the dry ingredients and the raisins.
Drop onto cookie sheets with a cookie scoop. Bake for 10-13 minutes. Cool on cookie racks.
