I found this recipe over at One Ordinary Day. I'm always up to trying another pancake recipe, especially if it has whole wheat flour in it! This was actually a pretty fluffy pancake. I always add a few chocolate chips to Sloan's pancake. This recipe doesn't make to many, I think I got 5, 5 inch pancakes from the recipe, so if you have a big family or your family eats a lot of pancakes, you might want to double it.
Whole Wheat Oatmeal Pancakes
1/2 cup plain yogurt1/4 cup milk (more if batter is too thick)
1 egg
1 Tablespoon oil
1 tablespoon honey
1 tablespoon light brown sugar
3/4 cup whole wheat flour
1/2 cup oatmeal
1/4 teaspoon soda
1 teaspoon baking powder
pinch of cinnamon pinch of nutmeg
Whisk together yogurt, milk, oil, honey, and egg in a large bowl. Whisk the remaining ingredients together in another bowl. Add the wet ingredients to the dry ingredients and mix gently. If batter is especially thick, add 1-2 Tbsp. of extra milk.
Heat a griddle and spray with nonstick spray. Ladle 1/3-1/2 cup of pancake batter for each pancake. Cook until golden brown on bottom, then flip and cook an additional 2-4 minutes, until golden on both sides.
