I had a fantastic early birthday present this morning! 51 followers! I've noticed on other blogs that followers are called peeps, so I'd like to thank all my peeps for stopping by and following me! I'll be just flying down the road this morning on my run! Of course the family here doesn't really understand the follower thing, but my daughter Jennie does. She has a great blog over at Tuffet. Don't you just love that name? She is an amazing cook, and she also has 3 sweet little ones. She just moved to a cute little cottage in Maine and she's in the country now. I really like this coffee cake recipe, it's like a biscuit dough, so it's super easy and quick. My family loved it!
Quick Coffee Cake
1 1/2 cups flour
1 1/2 teaspoons baking powder
6 tablespoons sugar
1/2 teaspoon salt
1/3 cup shortening
1/2 cup milk
1 egg
1/2 teaspoon vanilla
2 tablespoons butter, melted
1/2 cup brown sugar
2 tablespoons flour
1/2 teaspoon ground cinnamon
Preheat oven to 425 degrees. Spray a 9 inch square pan with Pam.
In a large bowl mix together the flour, baking powder, sugar and salt. Cut in the shortening with a pastry blender to the size of small peas.
In a separate small bowl, beat the egg well, then stir in the milk and vanilla. Add the egg-milk mixture to the flour mixture all at once. Stir carefully until just blended.
Pour batter into prepared pan and spread evenly (batter will be thick). Drizzle top with melted butter.
In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle on top of cake. Pour batter into prepared pan. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.
