Lemon Whoopie Pies
This recipe comes from Joy The Baker. I was having some friends over for tea, so I decided to try these. I love the intense lemon flavor of these!
Lemon Whoopie Pies
1 cup sugar
3/4 stick butter
1 egg
1 teaspoon lemon zest
1 teaspoon vanilla
1 tablespoon lemon juice
1/2 cup buttermilk, I soured milk with vinegar
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon soda
1/4 teaspoon salt
Heat the oven to 350. In a bowl whisk the dry ingredients.
In a mixer beat the sugar and butter for 3 minutes. Beat in the egg, lemon zest, lemon juice and vanilla. Add the buttermilk. The mixture will look curdled. Add the dry ingredients and mix well.
Drop onto cookie sheet with a cookie scoop. Bake 10 minutes. Let cool then remove to cookie rack.
Lemon Filling
3 oz cream cheese
6 Tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon vanilla extract
1 teaspoon finely grated lemon zest
2 Tablespoons lemon juice
2 3/4 cup powdered sugar
Beat all the ingredients (except lemon juice) in a mixer until light and fluffy adding enough lemon juice to make the frosting spreadable. Spread on a cooled cookie. Top with another cookie.

I haven't tried these yet, but I am anxious to do so! Why is the filling called "Lemon Cream Cheese Filling" when there is no cream cheese listed in the ingredients?
I adjusted the recipe, I can't believe I left out the cream cheese!
Thank you for posting this recipe! It was fabulous. We love lemon and the recipe turned out perfectly. The cream cheese lemon icing was just right. I need to work on consistency for my cookie sizes, but all it in this was a huge success.
