I found this recipe over at Two Peas And Their Pod. I had all the ingredients so I decided to give it a try. These bake up nice and moist, and I loved the cinnamon sugar on the top. I left the peel on the apple for a little added nutrition or was it laziness? The kids gave these a thumbs up!
Apple Cinnamon Cookie Bars
2 1/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1/8 teaspoon allspice
pinch nutmeg and cloves
1/2 cup butter, melted
1 cup sugar
2 eggs
1 teaspoon vanilla
2 apples, cored and chopped (I left the peel on)
cinnamon and sugar mixed to sprinkle over top
Preheat oven to 350 degrees. Spray a 9x13 pan with Pam. Whisk all the dry ingredients in a bowl.
In a mixer beat the sugar, melted butter, eggs and vanilla. Mix in the dry ingredients and apples. Spoon dough into prepared pan, dough is kind of thick. Pat down and sprinkle with the cinnamon and sugar mixture. Bake for 30 minutes or until golden brown. Cool and slice.
