Gingerbread Butterscotch Cookies

I found this recipe over at Modern Country and had to try it! I just bought some butterscotch chips the other day so I didn't need to run to the store. I thought this sounded like an odd combination, but Jaime said that everyone asks for them at Christmas. My family loves gingerbread and they love butterscotch. I didn't even tell the family what was in them and they gobbled them down.

Gingerbread Butterscotch Cookies

1 1/2 cups brown sugar
1 cup butter, room temperature
1 egg
1/3 cup molasses
3 cups flour
2 teaspoons soda
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ginger
3/4 teaspoon cloves
1 (11 Oz) bag butterscotch chips

Heat oven to 350 degrees. In a bowl whisk all the dry ingredients.

In a mixer beat the brown sugar and butter for 2-3 minutes. Beat in the egg and molasses. Mix in the dry ingredients then add the butterscotch chips.

Drop onto cookie sheets with a cookie scoop. Bake 9-11 minutes. Remove to cookie racks to cool.
