I found this recipe over at The Tasty Kitchen and it happens to be one of Pioneer Woman’s recipes. It is sooo yummy! The dough was a little soft and I was afraid it would need more flour, but they baked up great! My whole family likes them, yup, even Sloan! I will be making these a lot! They make the house smell great too!
Spicy Molasses Cookies
2 cups Sugar
1 1/2 cups Crisco (vegetable Shortening)
1/2 cup Molasses
2 Eggs
4 cups Flour
5 teaspoons Baking Soda
4 teaspoons Cinnamon
4 teaspoons Ground Ginger
1 teaspoon Ground Cloves
1/2teaspoon Ground Cardamom
1/2 teaspoon Salt
Heat oven to 350 degrees. In a large bowl whisk the flour, baking soda and spices and salt. In a mixer, mix sugar, shortening, molasses, and eggs together until well combined. With a cookie scoop, scoop out cookies and roll them in sugar. I like to use the organic sugar that comes in a box because it stays crunchy after the cookies are baked. Place balls on a baking sheet and bake for 10-12 minutes, allowing to bake for about a minute after cookies begin to crack.
Remove cookies from baking sheet and allow to cool…though these are delicious while still warm.
