Sloan just loves mint and chocolate together, so I came up with this chocolate cookie recipe then I just added the mint chips. Sloan loves them!
Chocolate Mint Chip Cookies
1 cup butter
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon soda
1/2 teaspoon salt
2 cups mint chocolate chips
Heat oven to 350 degrees. In a bowl whisk the flour, cocoa, soda and salt. In a mixer beat the butter and the sugar for 2-3 minutes. Add the eggs and vanilla and mix well. Beat in the dry ingredients and mix well, then mix in the chips. Drop onto cookie sheets with a cookie scoop. Bake for 10-12 minutes. Cool on racks.
