I cam up with this recipe because we had an over abundance of lovely roma tomatoes! That is not a bad thing! I love all these flavors together, they are truly summer!
Tomato Salad
3-4 cups cherry tomatoes
1 small onion, sliced thin
1 can olives, chopped
1/2-3/4 cup sliced pepperoni
1/2-3/4 cup sliced Pepperoncini peppers
Dressing
3 tablespoons pepperoncini juice
1 tablespoon red wine vinegar
2 cloves garlic, grated
salt and pepper to taste
6-9 tablespoons olive oil
1/4 cup Parmesan cheese
Put all the salad ingredients in a bowl and toss. In a small bowl whisk the pepperorincini juice, red wine vinegar, grated garlic, salt and pepper really well. Whisk in the olive oil and pour over the tomato mixture. Mix well, chill and serve.

This recipe looks tasty! My favorite so far this summer has been a steak salad, but that might just be because I like to grill. http://www.capturinghappiness.com/the-perfect-summer-salad/

Oh, that looks so delicious! I am such a sucker for pepperoni in a salad.
