The other night my sweet hubby and I went on a date to give blood, fun huh? Well, they do have free snacks and juice! lol Well, my sweet hubby had a package of the little Nutter Butter Bites. He was sweet enough to give me one (I was picking the nuts out of a package of trail mix and drinking water, trying to be good!) and I said hey, I should try making peanut butter whoopie pies! So I came up with this recipe! I added oatmeal too the cookie, hey, oatmeal, peanut butter, that's kind of healthy!
Peanut Butter Whoopie Pies
1/2 cup shortening
1/4 cup peanut butter
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon soda
1 cup flour
3 cups oatmeal
Heat oven to 350 degrees. In a bowl whisk all the dry ingredients.
In a mixer beat the shortening, peanut butter, egg and water. Add the dry ingredients and mix well. Scoop onto a cookie sheet with a cookie scoop. Flatten with a glass. Bake for 10 minutes. Remove to cookie racks to cool.
Frosting/Filling
4 cups powdered sugar
1/4 cup peanut butter
1/3 cup butter
milk
Beat all the ingredients drizzling in enough milk to make a good frosting/filling. Sorry, I don't ever remember to measure this part. Spread on cooled cookie, top with another cookie, say WHOOPIE!
