I'm also linking up with We Are That Family For Works For Me Wednesday. Here's my little tip for the day. I know it's a simple one, but sometimes we get in a hurry. Read through your recipes before you begin to bake. I still get ahead of myself, but this time I read through the recipe I've used for years for Lemon Bars and found that you need to beat the egg mixture for 3 minutes, Voila! The best lemon bars ever!
These lemon bars have a nice hint of lemon. We love the shortbread type crust. These make a nice refreshing treat!
Lemon Bars
1 cup flour
1/2 cup butter, room temperature
1/4 cup powdered sugar
2 eggs
1 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons lemon juice
Heat oven to 350 degrees. Spray an 8x8 inch pan with Pam.
In a mixer beat the flour, powdered sugar and butter. Mixture will be a little crumbly. Press into prepared pan. Bake for 20 minutes.
Remove crust from oven.
In clean mixer bowl beat the eggs, sugar, baking powder, salt and lemon juice for 3 minutes
Pour over hot crust. Bake for 25 minutes or until no imprint remains when touched. Cool. Sift powdered sugar over the top and cut into bars.
