We fix a lot of roasts and ham at our house, so there is always leftover meat. I needed a quick dinner so I came up with Ham Hash! It is super quick to make and you can add anything you like!
Ham Hash
3 cups ham, chopped
4 potatoes, scrubbed and chopped
1 onion, chopped
1 green pepper, chopped
1~2 cups cheese, grated (any kind you have on hand)
2 tablespoons olive oil
Salt and Pepper
Heat oil in a large frying pan. Add the potatoes and cook for 5 minutes, turning as needed. Add the onion and green pepper and cook and turn for 5 minutes. Add the ham and cook until warm. Season with salt and pepper. Stir in the cheese.
