I made these cookies the other night for Chauncey's violin recital. Butterscotch and coconut go together really well, and these cookies are nice and moist inside.
Butterscotch Coconut Cookies
1 1/2 cups butter, softened
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 eggs
1 teaspoon soda
1/2 teaspoon salt
3 cups oatmeal
1 1/4 cups flour
1 package butterscotch chips
1 cup coconut
Heat oven to 350. In a bowl whisk the dry ingredients.
Cream butter and sugars for 1 minute. Beat in eggs and vanilla. Add the dry ingredients and mix well. Mix in the coconut and butterscotch chips.
Scoop onto a cookie sheet with a cookie scoop. Bake for 10-12 minutes, remove to a cookie sheet to cool.
