Macaroni And Cheese Soup


Do you have a package of macaroni and cheese in the back of your pantry? A package that you keep on hand for a quick dinner for the kids? Well, pull it out and try my Macaroni And Cheese Soup recipe! This is a great way to use up some leftover meat. I've made it with ham, chicken and hot dogs. I know, shocking, hot dogs of all things! This is a budget friendly recipe! It calls for beer, but we don't drink beer, so I just use 1 tablespoon of vinegar in a cup of water. It gives the soup a little bit of a tang. You could always leave it out if you're not sure.

Macaroni And Cheese Soup


1 7 1/2 ounce package macaroni and cheese
1/4 cup butter
3 tablespoons flour
3 1/4 cups chicken broth
1 cup beer or I use 1 tablespoon vinegar in 1 cup water
1 can green beans, drained
1 cup diced ham (I used a package of hot dogs, cut up)

In a pan cook the macaroni in water until tender. Drain and set aside.

In a soup pot melt the butter. Add the flour and cheese mix from the macaroni
and cheese, stir until mixed. Add the chicken broth and the beer or vinegar, water mixture. Stir until it boils and thickens. Add the meat, drained macaroni and the drained beans. Cook and stir for occasionally for 5 minutes.

Carol, Are you suggesting that instead of cracking a beer I should drink a spoonful of vinegar?! I would so much prefer the beer however there are a lot less calories in the vinegar. Oh the choices. This looks yummy and my WHOLE family would love it. I hate being a short order cook. You rock it gal!
