Chili Makes A Great Winter Meal!


Chili is something that my family loves, even my picky eater Sloan! I love to make a big batch of chili in the winter and we usually end up with it on Super Bowl Sunday. We didn't even watch the game this year, we played Killer Bunnies instead and enjoyed the chili for dinner. We like it in a bread bowl with sour cream and lots of grated cheddar cheese.

Chili


1 pound red beans
1 pound hamburger
1 pound breakfast sausage
1/2 pound Italian sausage, remove the casings
4 cups tomato sauce
2 cups chopped onions
2-3 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon onion
1 teaspoon kosher salt
1/2 teaspoon pepper
1/4 teaspoon paprika
1/2 teaspoon red pepper flakes

Rinse and sort the beans. Cover with water in a large pot and bring to a boil. Reduce heat and boil for 5 minutes. Turn of the burner and leave them overnight. The next morning rinse the beans really well for about 5 minutes. Cover with water and bring to a boil and cover with a lid, reduce heat to low and cook for 3-4 hours until tender. Drain the water. I leave the beans in my colander while I cook all the meat in the pot. When the meat is cooked add the onions and cook until translucent. Add the beans back in to the pot, the tomato sauce and spices. Stir and cook until bubbly. Reduce heat to low and cook for a couple more hours. Serve in a bread bowl or a bowl with cheese and sour cream.
