My family loves my cheddar broccoli ham soup, it's just a version I made up. I love it because it's good with or without the ham and it's pretty easy too. I have found that if I'm making a huge pot of cream soup it's better not to add all the milk until it's just started to boil and thicken, then I add the rest of the milk, otherwise it won't thicken well.
Cheddar Broccoli Ham Soup
1/2 cup butter
1 large onion, chopped
1 cup flour
2 large potatoes, chopped
4 cups or so broccoli, steamed and chopped
2-3 cups ham, or what ever you have
6 cups milk
1/2-1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1 teaspoon onion salt
dash red pepper flakes
sea salt to taste
Cook the potatoes in water until just fork tender.
In a large soup pot melt the butter and cook the onion until just translucent. Add the flour and stir for 2 minutes. Add 4 cups of the milk and the seasonings. Cook and stir until it just boils. Add the rest of the milk and stir well. Drain the potatoes and add them, the ham and broccoli and stir until heated. Sprinkle in a handful of cheese at a time stirring until melted. Serve warm.
3-4 cups grated cheddar cheese
