Heart Pockets, Strawberry Cream Cheese Muffins
I found these adorable little heart pocket kits over at Susan's Etsy Store Sweetwater Scrapbook. As soon as I saw them I knew I had to make some! They are so sweet, so I ordered 2 sets! (Yes Jennie, one set is for you!) I like to do a little Valentine's Party for my family each year with little gifts and decorations, so these will be fun to use and my daughter and her 3 little ones will be with us this year!
My sister in law brought me over a whole case of strawberries the other day and I had cream cheese left from Christmas baking, so I knew just what I wanted to make first! Strawberry Cream Cheese Muffins! I tweaked a couple of recipes and put them together and came up with a real winner! My family loved them!
Strawberry Cream Cheese Muffins
1 cup flour
1 1/4 cups buttermilk
1 cup sugar
1/2 cup strawberry jam
1/4 cup oil
1 egg, lightly beaten
1 1/2 cups whole wheat flour
1 teaspoon salt
1 tablespoon baking soda
1 cup chopped strawberries
Filling
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 1/2 tablespoons flour
1 egg
1 teaspoon vanilla
Preheat oven to 375 degrees. Spray a 12 cup muffin tin with Pam and 3 large custard cups.
In a bowl whisk all the dry ingredients. In another bowl whisk the jam, buttermilk and egg. Add to the dry ingredients until just mixed. Mix in the strawberries.
In another bowl beat the cream cheese and sugar until fluffy, 2 minutes or so. Add the flour and beat. Beat in the egg and vanilla.
Spoon some batter into muffin tins and custard cups, then spoon about a tablespoon of cream cheese filling over batter then top with more batter filling tins and custard cups 3/4 full. Bake for 15-18 minutes or until the tops spring back when lightly touched.
