Black Bottom Banana Bars

Oh my gosh, I have 44 people following me! I feel so honored! I'm so excited to have friends out there! If you like my blog you might also like my daughter Jennie's blog, you can find her at Tuffet.


This is what I saw yesterday morning when it got light out. More snow! It is really pretty and it does make the old snow look better, but part of me was wishing that the snow would just melt! I don't know how it is in your town, but in ours it's really hard to walk in the winter. People clear the sidewalks most of the time, but when you get to the end of the block you have to walk through ice or slush! Not so fun, and I like to go for walks. When I run I tend to just run on the side of the street where there are less obstacles.

I found this recipe in my new favorite cookie cookbook, Taste Of Home Cookies.

These are nice and moist and sooo yummy! They remind me of a banana bread, so I think they could be made in a loaf pan and sliced. Maybe next time I'll try that. What could be better than chocolate and bananas!

Black Bottom Banana Bars

1/2 cup butter, room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups mashed bananas, about 3 medium
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/4 teaspoon cocoa

Heat oven to 425 degrees. Spray a 9x13 inch pan with Pam. Whisk the flour, baking powder, soda and salt in a bowl.

In a mixer cream the butter and sugar for 3 minutes. Add the eggs and vanilla. Beat in the bananas and the dry ingredients. Divide this mixture in half. To one half add the cocoa powder and mix well.

Spread the banana mixture in the prepared pan, cover with the chocolate banana mixture. Swirl the top. Bake for 20-25 minutes. Cool. Dust with powdered sugar and cut into bars.

We make these as muffins - put a scoop of the plain batter in, then a scoop of the chocolate batter on top. YUM! :)
