Really Great Whole Wheat Bread

This is a really great whole wheat bread. It stays moist on the counter for days and it's pretty easy to make if you have a mixer that will knead bread. It is so soft and has a nice sweetness too it.

Really Great Whole Wheat Bread

9-10 cups whole wheat flour
2 tablespoons yeast
1/2 cup oil
1/2 cup sugar
2 eggs
2 tablespoons salt
1/3 cup molasses
1 cup powdered milk, instant, dry
4 cups warm water

In your mixer pour the water, sprinkle the yeast over the top then about 1 tablespoon of the 1/2 cup sugar. Let this sit for about 5 minutes to proof. Then in the mixer, combine oil, sugar, eggs, molasses and powdered milk. Add and about three cups of flour and begin mixing. Gradually add the remaining flour. Knead in mixer for 10 minutes.

You will want it sticky to the touch but not sticking to your finger. Remove the dough to a large greased bowl. Cover with a towel and let rise until double in size.

Punch the dough down. Remove from bowl. Divide into four equal parts, on a greased counter, I like to use my bench scraper to cut the dough into equal pieces. Make into a ball and spank to get bubbles out. With your hands pull the ends under and pinch the bottom seam. Place seam down into greased loaf pans. Cover and let rise until nicely rounded, about 30 minutes.

Bake at 350 degrees for 30 minutes. Remove from pans and cool on wire racks.
