Chocolate Zucchini Cookies


These cookies have a little less fat than a lot of cookies and with the zucchini and chocolate, you can’t go wrong! The family loved them!

Chocolate Zucchini Cookies

1/2 cup butter flavored shortening

1 cup sugar

1 egg

1 teaspoon vanilla

2 1/4 cups flour

1/3 cup cocoa

1 teaspoon soda

1/2 teaspoon salt

1 3/4 cup zucchini

Heat oven to 350 degrees. Whisk all the dry ingredients in a bowl.

In a mixer cream the shortening and sugar. Add the egg and vanilla. Mix in the zucchini and the dry ingredients. Scoop onto cookie sheets with a cookie scoop. Bake for 12 minutes. Remove to racks to cool.
